Dozens of tried-and-tested recipes, including grandmother Leokadia’s lemonade, wild strawberry tinctures, paprika pickles, raspberry jam with ‘stone’, pomegranate ambrosia, rose cordial, and dried cherries in bouquets, have been included in the book ‘University of Bialystok in a measuring cylinder’. The recipes were shared by employees of the Podlasie university.
A year ago, the book ‘University of Bialystok from the kitchen’ was published. It was then that the culinary passions of the university’s employees were presented for the first time. It was decided to continue the initiative and the next edition focuses on preserves and health-promoting tinctures. Readers will find over 80 recipes in the book, including jams, preserves, pickles, marinades, salads, sauces, syrups, tinctures, liqueurs and cognacs.
The authors of the recipes are rectors, deans, directors and managers of university-wide units, academic teachers, representatives of central administration or librarians. They pass on to the readers, among other things, family traditions, author’s recipes created out of the need of the moment, and even their own fascination with flavours, colours and aromas. Each culinary suggestion is accompanied by its history, and health properties are also indicated.
Professor Robert Ciborowski, rector of the Białystok university, shares a recipe for wild strawberry tincture, Professor Mirosław Ratkiewicz from the Faculty of Biology proposes an express ‘gluten free’ beer, Dr Izabela Kraśnicka from the Faculty of Law offers pumpkin and orange jam, and Katarzyna Dziedzik, spokesperson for the university, puts her own spin on ‘almost’ asparagus.
The publication is also an original form of promoting the University of Białystok and the unusual personalities that make up its community. Information about the university’s faculties and university-wide units has been added to the culinary recipes.
“We also keep science in mind, which is why we look at tinctures and preserves through the eyes of a biologist, chemist and historian”, says Agnieszka Jabłońska-Perkowska, head of the university’s promotion department.
